मखाने के बीजों (lotus seed) को इकट्ठा करने के लिए सबसे पहले तालाब के अंदर गोता लगाकर या इन्हें बांस के जरिए पानी से बाहर निकाला जाता है, फिर बड़े-बड़े बर्तन में एकत्रित करके उन बीजों को लगातार हिलाते हैं और उसके ऊपर लगी गंदगी की साफ-सफाई करके उन्हें पानी से बार-बार धोया जाता है। फिर उसे चटाई पर सुखाया जाता है। उसके बाद लोहे की बड़ी-बड़ी कई छलनियों की सहायता से उनको साइज के हिसाब से अलग करके स्टोर किया जाता है।

मखाने के बीज जब पूरी तरह सूख जाते हैं तब उन्हें फ्राई करके उससे मखाने या फूल मखाना बनाए जाते हैं। इसको बनाने का कार्य उतना भी आसान नहीं है, जितना आप सोच रहे हैं,
जी हां... मखाने के बीजों से फूल मखाना तैयार करने के लिए एक तय समय के अंदर ही यह सारा प्रोसेस पूर्ण करना होता है, वरना इनके खराब होने के चांसेस ज्यादा रहते हैं। इसके अलावा इन्हें फ्राई करने के बाद बांस के कंटेनर में स्टोर करते समय एक खास कपड़े से ढंककर रखा जाता है और तापमान सही रखने के लिए कंटेनर के आसपास गोबर का लेप किया जाता है।
कुछ घंटों के पश्चात उन्हें पुन: फ्राई करके पहले की प्रक्रिया दोहराई जाती है। अगर एक बार फ्राई करने में ही बीज फट गया तो उसमें से सफेद मखाना बाहर निकलता है। फिर उन्हें लकड़ी के तख्तों पर इकट्ठा किया जाता है। अंतत: कड़ी मेहनत के बाद स्वादिष्ट मखाना तैयार होता है।
