Pyaaz Ki Kachori: Green onion की चटपटी लाजवाब कचौरी
सामग्री :
ढाई कप मैदा, 200 ग्राम हरा प्याज (बारीक कटा हुआ), आधा कटोरी बेसन, 1 चम्मच अदरक किसा हुआ, 1 हरी मिर्च (बारीक कटी), बेकिंग पावडर 1 चुटकी, 1 चम्मच सौंफ, 1 चुटकी पिसा हींग, लाल मिर्च (पिसी हुई) स्वादानुसार, नमक आवश्यकतानुसार, तलने के लिए पर्याप्त तेल व राई-जीरा।
विधि :
सबसे पहले हरे प्याज को बारीक काट लें। 2 छोटे चम्मच तेल गरम करके राई-जीरा तड़काएं और कटी हरी मिर्च डाल दें। अब हींग, सौंफ डालें और कटे हरे प्याज डाल कर अच्छी तरह हिलाएं। अब उसमें बेसन डालें और नमक व लाल मिर्च डालें व पानी का छींटा देकर थोड़ी देर पकने दें। मसाला भून जाने पर आंच से उतार लें और ठंडा होने दें।
अब मैदा, बेकिंग पावडर व नमक को एक साथ छान लें, फिर तेल का मोयन डालकर अच्छी तरह से मलें। गुनगुने पानी के साथ नरम गूंथ लें। गूंथ हुए मैदे से मध्यम आकार की लोइयां बनाकर बीच से दबाएं और हरे प्याज का भरावन अच्छी तरह से भरें और हल्का-सा फैलाकर उसका मुंह बंद करके कचौरी तैयार कर लें।
इसी तरह सभी कचौरियां बना लें और एक कड़ाही में तेल गरम करके कुरकरी कचौरी तलकर निकाल लें। तैयार Green onion की चटपटी कचौरी को हरी चटनी व इमली की चटनी के साथ गरम-गरम सर्व करें।
